Caesar Dressing

Caesar Dressing (Serves 4)

6 cloves garlic, roasted*
1 cup unsweetened soy, hemp or almond milk
1/2 cup raw cashew butter
2 TBL Nutritional yeast
2 TBL fresh lemon juice
1 TBL Dijon mustard
1/8 tsp black pepper

Blend all dressing ingredients together and pour over salad.

* To roast garlic, break the cloves appart, but leave the papery skins on. Roast at 350F for about 15 minutes until garlic becomes mushy. When cool, remove skins.
