Cocoa Nut Butter Truffles

Cocoa Nut Butter Truffles (16 Servings)

1-1/2 cups dry old-fashioned oatmeal
1 cup fat free powdered milk
3 tbl unsweetened cocoa powder
4 tbl "The Biggest Loser" chocolate protein powder
2 tbl ground flax seed
2 packets truvia or other natural sweetener
1/2 cup unsweetened vanilla almond milk
1/4 cup all natural almond butter or peanut butter
1/2 cup chopped almonds or walnuts (optional, see note)

In a large bowl, mix the oatmeal, powdered milk, cocoa, protein powder, flax seed and sweetener. 

In a small bowl place the almond milk and nut butter. Microwave for 1 minute. Add the vanilla and stir well.

Add the nut butter mixture to the dry ingredients and stir to comdine. There will be about 2 cups of mixture. Stir in the nuts, if desired.

Using s 2 tbl scoop form 16 "truffles"and refrigerateuntil firm. Wrap individually and store in the refrigerator.
