Cranberry-Nut Truffles

Cranberry-Nut Truffles (serves 16)

2 cups dark baking chocolate, chopped
1 (8 oz) package fat-free cream cheese
3 cups splenda
1 cups dried cranberries
2 cups walnuts, finely chopped

Melt the chocolate; add fat free cream cheese, splenda and cranberries. Taste, may need more splenda. Put in refrigerator for an hour or two. Take out and roll in small balls and then roll in the chopped walnuts. These are very rich but are a good substitute for a specialoccasion. I make them at Christmas time. Some of my clients have experimented with different nuts and dried fruits or coconut with good result.
