Egg White Bites

Egg White Bites (Makes 12)

2 cups grated or chopped vegetables (carrots, zucchini, onion, mushrooms, bell peppers, spinach)
18 egg whites (or 2-1/4 cups of egg substitute)
1/4 cup grated low-fat cheddar, jack or mozzarella cheese

Position a rack in center of ovenand pre-heat to 350F. Lightly coat 12 cup muffin tin with olive oil cooking spray. 

Spray a nonstick skillet with cooking spray and cook the vegetables briefly. Place a small nest of vegetables in the bottom of each muffin cup, then fill the cup 3/4 full with egg whites. Add seasonings as desired. Sprinkle a small amount of cheese over each cup. 

Bake the eggs for about 10 minutes until they are just set.
