Eggs Ranchero

Eggs Ranchero  (Serves 2)

1 tbl coconut oil
2 shallots, chopped
1 garlic clove, minced
1/2 cup canned black beans, drained and rinsed
1/2 tsp cumin
1/2 tbs paprika
1 egg plus 2 egg whites (or egg beaters)
Salt and pepper to taste
2 low fat, low carb large tortilllas
4 tbl salsa

Cook shallots and garlic in oil and add eggs. Then add all other engredients.

Heat the tortillas in microwave for 30 seconds. Divide the egg mixture and top with salsa.
