Minestrone Soup

Minestrone Soup (Serves 6)

2 tbl olive oil
1 onion, coarsely chopped
2 celery stalks, chopped
2 small potatoes, cubed
1 carrot, chopped
1 zucchini, sliced
1 tsp fresh thyme, chopped
1 bay leaf
1 15 oz can organic stewed tomatoes
4 cups vegetable or chicken stock
1 15 oz can organic kidney beans, drained and rinsed
1/2 cup dry pasta, whole wheat or gluten-free
2 cups fresh baby spinach
2 tbl finely chopped fresh parsley
Salt and pepper to taste

Heat the olive oil and stir in onion, celery,potatoes and carrot. Cook stirring frequently for about 5 minutes. Stir in the zucchini, thyme and bay leaf and cook for another 2 minutes. Add tomatoes and stock. bring to a boil, reduce heat and simmer for 10 minutes. Stir in beans and pasta and simmer for 10 minutes. Add spinach and parsley and season with salt and pepper.
