Pumpkin Muffins

Pumpkin Muffins (Serves 12)

1 cup squash, pumpkin or sweet potato
2 cup almond meal
4 eggs
1 cup ripe banana, mashed
1 cup blueberries (optional)
1 cup chopped walnuts
2 Tbl olive oil
1/4 tsp salt
2 tsp baking powder

Prepare a 12-muffin tin, preheat oven to 350F. Mix everything together and bake for 25-30 minutes. Cook and remove. These muffins are high in protein and antioxidants, but without any grain or sugar.
