Salmon Mousse Recipe

Salmon Mousse (Serves 8)

2 8oz cans of salmon, drained
1-1/2 cups non-fat sour cream
1 cup cooked frozen artichoke hearts (or canned in water)
1/2 cup chopped green onions
1 T. chopped fresh dill
2 tsp Dijon mustard
1 T. fresh lemon juice
1 T. rinsed capers

Process in a food processor unil smooth, refrigerate about 1 hour before serving. Can be used as an appetizer or sandwich spread.
