Savory Lamb Stew

Savory Lamb Stew (Serves 4)

1 tpl coconut oil
1/2 small onion, chopped
12 oz lean lamb
28 oz can diced tomatoes
1/4 tsp pepper
2 cups fresh green beans
2 tbl toasted pine nuts (optional)

Heat coconut oil in pan over medium heat. Add onion and saut'e for one minute. Add the lamb and cook until meat is lightly browned, about 5 minutes. Add tomatoes and pepper, simmer for 15 minutes. Add the green beans and semmer for 5 minutes.
