Strawberry Mousse
Strawberry Mousse (serves 4)
1 lb extra firm silken tofu
1 cup strawberry puree
1 Tbl vanilla extract
1/8 cup splenda
Puree tofu in a blender until smooth. Add remaining ingredients. Puree until thoroughly combined. Pour into serving glasses. Garnish each serving with a raspberry.
