Sweet Cinnamon Oatmeal

Sweet Cinnamon Oatmeal (Serves 2)

2 cups water
1 cup gluten free oats
1 tsp chia seeds
1 tsp ground cinnamon
1/2 cup dried apricots
1/4 cup dried currants
1/4 cup goji berries (for garnish)
1/2 cup almonds, chopped (for garnish)

Bring water to a boil and stir in oats. Add chia seeds, cinnamon, apricots and currants. Simmer 5 to 8 minutes to desired consistency.

Garnish with goji berries and almonds.
