Sweet Potato Stew

Sweet Potato Stew (Serves 8)

1 tbl olive oil
3 cloves garlic
2 bell peppers
1 large onion
1 tbl ginger
1/2 tsp allspice
4 cups broth (vegetable of chicken)
2 large sweet potatoes, peeled and chunked
1 lb spinach
1 can garbanzo beans
1/2 cup peanut butter
1 can tomato paste

Brown garlic, onion and peppers in olive oil. Put everything except the peanut butter and tomato paste in a pan (I use crockpot). When the sweet potatoes are tender stir in the tomato paste and peanut butter. Can be eaten plain like soup or stew or put over brown rice.  very good!

Note: I eliminate the olive oil and put everything in a crockpot except the peanut butter and tomato paste. After the stew is done I add the peanut butter and tomato paste.
