Toasted Coconut Pancakes

Toasted Coconut Pancakes (Serves 4)
Makes 10 to 12 pancakes

1/2 cup unsweetened coconut
1cup whole wheat flour
1 tsp baking powder
1/2 tsp each, salt and cinnamon
1/4 stp nutmeg
1/8 tsp baking soda
3/4 cup light coconut milk
1/2 cup warm water
1-1/2 tbl honey
2 tsp pure vanilla extract

Toast coconut in skillet over medium heat without oiil. Whisk together flour, baking powder, salt, cinnamon, nutmeg and baking soda in bowl. In another bowl whisk together coconut milk, water, honey and vanilla extract. Stir together along with toasted coconut. Spray pan and cook.
