Tofu and Fried Rice

Tofu and Fried Rice (serves 8)

2 pkg extra firm tofu
2 Tbl light soy sauce
1/2 cup pineapple juice
3 Tbl sugar free raspberry jam
1-1/2 Tbl rice vinegar
Pinch of crushed red pepper
1-1/2 Tbl lemon juice
1 tsp minced garlic
2 tsp minced ginger
1/3 cup water
1/2 tsp chili powder
1/2 tsp basil
1/2 tsp curry powder

The day before, slice each piece of tofu into cubes. lay the cubes on a baking tray, cover with plastic wrap and freeze overnight. The next day put into boiling water to thaw. Place in 11 x 7 inch baking dish. Combine remaining ingredients, pour over the tofu. Bake at 400 F degrees, uncovered for 15 minutes.

Rice:

1 tsp minced garlic
1/4 cup minced onion
2 Tbl dry sherry
2 Tbl water
Pinch of black pepper
2 cups cooked brown rice
1 cup green peas
1 cup corn

On high heat saut's the garlic and onion in the sherry until the wine is evaporated. Add the water, pepper and warm cooked rice. Stir in the peas and corn. Cook until heated through.
