Whole Food Plant Based Diet
In May of 2017 I watched the documentary "Forks Over Knives" and was completely convinced that eating a whole food plant based diet was the healthiest diet for all humans as well as for the planet. I was not aware that animal agriculture causes more green house gases then fossil fuel. The rain forests are being mowed down in order to graze enough cattle to feed the population. The consumption of meat in the US has doubled since 1930.

I immediately changed my eating and subsequently dropped about 45 pounds. My husband Joe, who has never had much of a weight problem had high cholesterol and the doctor wanted to put him on lipitor. He finally decided that he would go on a whole food plant based diet also though wasn't so sure he could give up cheese. He was able to and has found the transition easy. His cholesterol went from 230 to 170 within 1 month.

Since my transition to this way of eating I have collected and read many books and watched many documentaries. Each one convinces me that I am on the right path. In 2018 I took a Whole Food Plant Based Nutrition Class from Cornell University. It was taught by Colin Campbell who wrote "The China Study". I became certified in Nutrition.
